Qu’est-ce que le Genmai?
Genmai (玄米) fait référence au riz brun/complet, avant qu’il ne soit raffiné. Il contient bien plus de vitamines et de nutriments que le riz blanc.
Le Genmai que nous utilisons à Obubu a la particularité d’être un riz à Mochi (« Mochi-gome »), utilisé pour la confection de gâteaux de riz gluants traditionnels au Japon.
Il est d’abord passé à la vapeur avant d’être torréfié, ce qui le rend très croustillant et aromatique.
