Join us for a hands-on miso-making experience with Ikuko-san, a cooking instructor based in Wazuka, Kyoto, and co-founder of Blodge Lodge.
Ikuko Blodgett or Ikuko-san, has long been passionate about sharing Japanese food culture through hands-on experiences and has hosted annual miso-making workshops for the local community. Now, she is bringing her knowledge and love of miso to this new experience in Wazuka.

A Miso-Making Experience in Wazuka, Kyoto’s Tea Country
Discover the traditional world of miso-making in the beautiful tea-growing region of Wazuka Town, Kyoto.
Begin your experience by learning about miso, its history, and the traditional methods used to make it. Then, it will be your turn to get hands-on and make your own miso under the guidance of a local cooking instructor.
Wazuka is renowned as one of Japan’s major tea-producing regions, but its culinary heritage extends far beyond tea. For generations, local farmers have preserved a rich culture of fermented foods, including miso, as an integral part of everyday life.
At Obubu Tea Farms, we aim to share more than just the story of tea. By working together with local artisans and producers, we introduce visitors to the unique food culture, traditions, and lifestyle of Wazuka’s satoyama countryside.
Surrounded by sweeping views of lush tea fields, you’ll explore the fascinating world of miso while discovering the deep connection between fermentation, food, and local life. Through this hands-on experience, take the time to savor two essential elements of Japanese food culture tea and miso and experience the richness of Wazuka at a relaxed, unhurried pace.

About our cooking instructor, Ikuko-san!
Meet our teacher today, Ikuko-san! A cooking instructor based in Wazuka, Kyoto, and co-founder of Blodge Lodge, Ikuko-san loves sharing the rich culture and traditions of Japanese food through hands-on experiences.
Today, she’ll introduce you to the wonderful world of miso and guide you through the traditional process of making it from scratch. You’ll learn about the ingredients, fermentation process, and different types of miso, before getting your hands involved in making two kinds of homemade miso yourself.
This is a fun, hands-on experience where you’ll discover the history and flavors behind one of Japan’s most beloved foods, while connecting with a local tradition that Ikuko-san has been sharing with the Wazuka community through her different activities.
Get ready to mix, knead, and create your very own miso to take home and enjoy!

味噌とその伝統的な製法について学んだ後、あなたの手で味噌作りを体験していただきます。
日本茶の一大産地として知られる京都・和束町。実はこの土地では、お茶だけでなく、味噌をはじめとする発酵食文化もまた、農家の暮らしの中で大切に受け継がれてきました。おぶぶ茶苑では、お茶づくりだけにとどまらず、地域で活躍する様々な職人や作り手たちとコラボレーションしながら、和束町ならではの豊かな食文化や暮らしの魅力を発信しています。今回はその一つとして、一面に広がる美しい茶畑の景色を眺めながら、和束町在住の料理講師から、日本の食文化に欠かせない味噌の世界を学びます。発酵という共通のプロセスを通じて、お茶と味噌、二つの日本の伝統食が持つ奥深さを、里山ならではのゆったりとした時間の中でじっくりと味わえる体験です。

京都・和束町を拠点に活動する料理講師、いくこさん。体験を通して日本の食文化の豊かさや奥深い伝統を伝えることに、いつも情熱いっぱいに取り組んでいます。和束町内のシェアカフェ「TSUNAGIBA」では、毎週木曜日に焼きたて熱々の「お茶ピザ」を提供し、地域の方々からも大人気!さらに町内で農家民泊「Blodge Lodge」も営み、海外からのゲストを温かく迎えながら、いくこさん手作りの伝統的な日本食でおもてなししています。
今回は、そんないくこさんが味噌の奥深い世界へとご案内!原料選びから発酵の不思議、味噌の種類の違いまで、昔ながらの製法を一つひとつ丁寧に、そして楽しく教えてくれます。そしていよいよ実践へ——自分の手で仕込む白味噌と信州味噌、2種類の自家製味噌作りに挑戦していただきます。
日本人に長く愛されてきた発酵食品、味噌。その奥深い歴史や豊かな味わいをその手で発見しながら、いくこさんが和束の暮らしの中で大切に育んできた地元の伝統に、ぐっと近づける特別なひとときです。

本ツアーは最大16名様までご参加いただけ、料金は お一人様 10,000円 です。料金には以下が含まれます:味噌の試食、味噌ペアリング軽食

Workshop Booking Steps:
Booking is required at least a week in advance to reserve your place on the workshop.
- To book your place on the workshop please select a date from the calendar at the bottom of the page.
- After submitting the booking form you will be directed to a payment page. Please make the payment at the time of the booking (you cannot return to the payment page afterwards).
- Your tour is reserved once the payment is confirmed (Stripe confirmation is regarded as the tour confirmation).
Cancellation:
- More than 14 days before the tour date: Full refund
- 14 – 7 days before the tour date: 80% refund
- 6 – 3 days before the tour date: 50% refund
- Less than 3 days before the tour date: No refund
- Booked through crowd funding: No refund
In case of a refund, we will refund you the amount after deducting Stripes’ Transfer and Booking Fees.
